Today I am sharing my most favorite breakfast burrito mix recipe. It is my husband Terry’s recipe. He has been making it for the last 20+ years. I think it has refined it to perfection!
My love for this Breakfast Burrito recipe is two-fold. First, they taste amazing, I mean really amazing! Second, they are such a time saver. It takes about 35 minutes to whip up a batch from start to finish. A batch makes about 12-14 servings.
We just pull out the filling in the morning load it in our tortilla and in the microwave it goes. So you can imagine my happiness when we can have a yummy, fast breakfast in the morning without the mess and hassle of making it every day!

FYI: The filling tastes great even without a tortilla, so don’t be afraid to go naked! I do all the time 🙂
Terry's Breakfast Burrito Filling
- 2 tbsp Vegetable or Coconut
- 10 Eggs medium
- 1 1/2 cup Egg Whites (optional)
- 1/4 cup Milk whole
- 1/2 cup Bell Pepper green
- 1/2 cup Bell Pepper yellow
- 1/2 cup Bell Pepper red
- 1 Jalapeno Pepper (optional) medium
- 3 cups Tater-Tots frozen
- 4 Sausage Patties pre-cooked, frozen
- 1/4 tsp Spike Seasoning
- 1/8 tsp Cayenne Pepper ground
- 1/8 tsp Salt
- 1/8 tsp Pepper
Heat 1 tablespoon oil in a 9" skillet
Place frozen tater tots in microwave on High for 2 minutes. Cut tater-tots into quarters and place in skillet with the oil and add 1/2 cup of yellow onion. Let cook about 3 minutes
Add yellow, red, green and jalapeno peppers in the skillet with tater-tots. Let cook an additional 5 minutes.
Add your spike Seasoning, Cayenne pepper and Salt and Pepper to taste.
Place your frozen sausage patties in the microwave and heat following package directions. Once they are done dice them up and place in skillet with other ingredients.
Let your mix cook an additional 15 minutes. You should add any additional Spike Seasoning, Cayenne Pepper, and Salt and Pepper to your liking.
Mix together 10 eggs, 1 1/2 cup of egg whites (optional) and 1/4 cup of milk
In a different skillet add 1 tablespoon of oil and scramble eggs to your liking. I recommend that you season eggs with salt and pepper to taste. When the filling has cooked the remaining 15 minutes you can add your eggs to the mix. That's It!
Breakfast burritos assembly - add cheese, hot sauce, salsa, fresh peppers. Whatever your heart desires!
